Woodland Buche de Noel
Inspired by the mossy woods of the Pacific Northwest, this yule log was an edible love letter to the region where I grew up. Made of two cakes, vanilla bean sponge with spiked eggnog buttercream and chocolate genoise sponge with Irish cream buttercream, the whole log is covered in dark chocolate-bourbon ganache. All mushrooms are homemade modeling chocolate, lichen is coral tuile, and ‘dirt’ is spiced cookie crumbs.
